Mint Matcha Smoothie

Mint Matcha Smoothie or what some people like to call, the Shamrock Shake! It’s a creamy, refreshing smoothie you can have for breakfast, pre/post-workout shake, or as a dessert! This smoothie is plant-based, naturally sweetened with bananas, and made with only 6-ingredients!

If you love all things mint, then you will love this smoothie. This recipe uses fresh mint and/or peppermint extract depending on your mint preference. My favorite addition of mint flavor is combining fresh mint leaves and CBD peppermint oil drops - so tasty!

What really elevates that fresh minty flavor is using matcha powder. Matcha comes from the same plant as green tea but since it is made from the entire leaf, it packs in a more concentrated amount of antioxidants and beneficial plant compounds. And since matcha is naturally lower in caffeine than regular coffee, this is a great alternative if you are wanting to cut back on coffee or incorporate it into your morning routine.

Even though this shake is considered a healthier version to the traditional “Shamrock Shake” feel free to make this when it’s not St. Patty’s Day! Now that you have the flavor combination down, feel free to change up the recipe. For example, add the optional greens powder/frozen cauliflower chunks if you know hitting your veggie goal is not in the cards that day.

  • 1/2 cup frozen banana

  • 1 cup unsweetened plant-based milk (I used my homemade cashew milk blend)

  • 1 heaping handful of fresh greens

  • 1 scoop vanilla protein powder

  • 1 scoop green superfood powder (optional)

  • Small handful of fresh mint leaves or 1-2 tsp peppermint extract

  • 2 tsp matcha powder

Toppings

  • cacao nibs, fresh mint, and yogurt

Directions 

  1. Add all ingredients to a blender and blend until smooth and creamy. Feel free to add more ingredients depending on preference. For example, add more bananas or another sweetener for a sweeter smoothie. 

  2. Nutrition Booster tip: instead of using ice cubes as a thickener, use frozen cauliflower or zucchini. Can’t taste it I promise!

Energizing Morning Smoothie Bowl

"Everybody's working for the weekend..." Now, every day feels like the weekend! At least working from home it has! On a Saturday, I would spend extra time in the morning to create a nourishing meal as I would lounge around with a cup of coffee in hand. Well, since it is getting warmer here in Kentucky, I’ve been making refreshing smoothie bowls that double as my morning cup of coffee!

Smoothie bowls are great for breakfast, post-workout meals, or for that 3pm slump since we are elevating our smoothie bowl with caffeinated bar bites! I love using Eat Your Coffee caffeinated bar bites for this recipe. Chocolate mocha flavor pairs perfectly with the subtle berry chocolate flavor from the smoothie bowl. Just add other fun toppings that add texture and variety like coconut flakes, granola bits, and dark chocolate chips.

If preparing a nourishing and caffeinated smoothie bowl doesn’t get you going while #workingfromhome, here are some tips for successfully working from home: 

  • Getting dressed every day. Okay, some most of the time, I am going back into yoga pants but at least make an effort to change into something different. 

  • Create an office environment. It’s getting warmer outside so why not work outside or work in a space where you have a view with natural lighting. 

  • Work around your ebbs and flows. In the morning, I tackle the highest priorities on my list because that is when I’m most productive. 

  • Movement. I sprinkle multiple breaks throughout the day by taking my dogs out for a walk, light stretching, and quick 20 minute workouts.

Ingredients

  • 1 large ripe banana (frozen)

  • 1/2 medium ripe avocado (fresh or frozen)

  • 1 large handful choice of greens

  • 1 cup unsweetened plant-based milk

Add-Ins 

  • 1 scoop plain or flavored protein powder/collagen powder

  • 1/2 tsp adaptogen of choice (maca, ashwagandha, etc)

  • 1/2 cup frozen berries

  • 1 Tbsp nut butter or seeds of choice (hemp, flax, chia, etc)

Toppings

Chia seeds, coconut flakes, dark chocolate chips, bee pollen, caffeinated energy bar bites, granola pieces

Instructions 

  1. To a high-speed blender, add all the ingredients, including any desired add-ins, and blend until creamy and smooth. If the smoothie is too thick for your taste, add more milk or water to thin. If too thin, add more frozen fruits or ice cubes. 

  2. Taste and adjust flavor as needed. Top with your favorite toppings, and enjoy!

Carrot Cake Smoothie

Carrot cake has got to be in my top 5 of favorite cakes. From the spices of cinnamon to the crunchy textures of nuts and carrots, there is nothing that will stand in the way of me and carrot cake.

That’s why I love recipe testing with carrot cake ingredients. One of the most popular recipes on the blog are these carrot cake pancakes. The post also includes a fun waffle variation if you are team #waffles.

But this smoothie version really takes the cake! (no pun intended)

On the fact that you just might have all the ingredients on hand! So if you are wanting something quick to make for breakfast or fuel before or after your workout, this recipe is for you! 

The only thing I will mention is that if you do not have a high-powered blender, like a Vitamix, then you may need to do some prep work before blending. You will need to finely grate the raw carrots before adding to the blender, that is all!

  • 1 cup raw carrots

  • 1 cup plant-based milk

  • ¼ cup gluten-free rolled oats

  • ½ frozen banana

  • 1 Tbsp almond butter

  • 1 Tbsp hemp seeds

  • ½ tsp vanilla extract

  • ½ tsp ground cinnamon

Boosters

1 scoop unflavored or vanilla-flavored collagen peptides or protein powder

Toppings

Chopped pecans, hemp seeds, cinnamon, carrot flakes, and coconut flakes

Directions 

  1. Add all ingredients to a high powered blender. Feel free to add any optional add-ins to your smoothie if you’d like. Blend until smooth. Serves 1. 

Notes 

  • You need a high powered blender for this recipe. If you do not have a high powered blender, finely grate carrots before adding to a normal blender. 

  • To make it sweeter, add the other half of frozen banana or pure maple syrup, honey. 

  • Add ½ cup ice cubes to keep the smoothie cold and thick.

What better way to start the new year than with a refreshing chocolate and tropical inspired smoothie? If I am going to hit the reset button, I’m going to do it this way. There is no...other...way!

But how about we take it up a notch? Not only are you going to feel like you are on vacation drinking this smoothie, you are going to look and feel pretty doing it. ;) Tropical notes that you will taste are from my favorite Vital Proteins Beauty Collagen line - Tropical Hibiscus. What gives this smoothie that vibrant tropical color is Vital Proteins spirulina capsules. Spirulina is an amazing superfood sourced from blue-green algae.   1. Add all ingredients to a high powered blender and blend until smooth and creamy. Remember to break open the spirulina capsules before adding to blender. You just want the powder, discard capsules.

  • If not using the specific spirulina brand, regular spirulina is fine; about 1-2 tsp. 

  • If the banana and/or mango are not frozen, use ½ cup ice.

Pumpkin Pie Protein Smoothie

Tis the season for #pumpkinspiceeverything! Who is with me!? Sure, fall festivals, wearing flannel, and watching football are all great, but October feels complete to me because I get to enjoy pumpkin spice! Even though I hate to admit it, I am your basic white girl, but I am not complaining because I could literally eat pumpkin every day if I wanted to -- and with this pumpkin pie protein smoothie, that is just what I have been doing!

 

This creamy pumpkin pie protein smoothie is just like pumpkin pie but without the guilt! Great as a post-recovery shake, breakfast or a healthy dessert!

I made this smoothie on a whim after a workout when I usually make a post-recovery smoothie. I was looking in my fridge for the usual spinach leaves but found leftover pumpkin puree instead. I thought, “Sure, pumpkin pie sounds healthy after a workout!”

That is what I did and it turned out amazing! Now, when I make this pumpkin pie protein smoothie as a post-recovery smoothie, I do not add the fun toppings. I usually add hemp seeds instead for that added protein! But, if you want to treat yourself to a fun Friyay breakfast, snack or dessert, then load the toppings on!

This creamy pumpkin pie protein smoothie is just like pumpkin pie but without the guilt! Great as a post-recovery shake, breakfast or a healthy dessert!

INGREDIENTS

  • 1/2 cup pumpkin puree

  • 1 frozen banana (ripe)

  • 1 cup almond milk

  • 1 tsp pumpkin pie spice

  • 1/2 tsp ground cinnamon

  • 2 Tbsp almond butter

  • 1 scoop protein powder

  • 1/2 cup ice

  • couple dashes of pink Himalayan salt

OPTIONAL TOPPINGS

Granola, coconut whipped cream, peanut butter, dash of pumpkin pie spice, hemp seeds

DIRECTIONS

  1. Add all ingredients to a blender and blend until smooth. Taste flavors and adjust accordingly; adding honey for more sweetness, more milk for a smoother/thinner consistency.

  2. Garnish with toppings of choice and enjoy!

NOTES

  1. Your banana must be ripe or else this smoothie will not taste sweet. If you do not have a ripened banana, use what you have and add 3 pitted medjool dates or 1 Tbsp honey and taste as you go for desired sweetness.

  2. Toppings: I used So Delicious Coco Whip, Nature’s Path dark chocolate macaroon granola, and Trader Joe's pumpkin pie spice seasoning

  3. Protein powder: Garden of Life

  4. I also add this brand of superfood green powder. Doesn’t change the smoothie flavor, just gives it a sweeter taste.
